Nutrition, Food Preparation and Menu Planning for ARFs

This course provides direct care staff in Adult Residential Facilities (ARFs) with essential knowledge and practical skills in nutrition, safe food handling, and menu planning. Designed specifically for caregivers working with adults with disabilities and special needs, the training addresses the unique dietary requirements and preferences of residents, including those with medical or cultural dietary restrictions. Participants will learn how to plan balanced meals, accommodate therapeutic diets, and recognize signs of malnutrition. The course also covers safe food storage, preparation, and documentation practices in compliance with California Title 22 regulations and federal standards. Caregivers will gain confidence in supporting residents’ health and well-being through person-centered nutrition practices, while ensuring food safety and regulatory compliance. This training is intended for caregivers and direct support staff only, and does not cover administrative or management-level responsibilities. 

Teaching Methods

Teaching methods will include the use of multiple video presentations, ebook, and PDF accompanying question/answer sections. Upon completion of the course, key points and references are available in a PDF format for students to refer to post-class and use in their business. A certificate of completion will be provided at the end of each course.

Method of Course Evaluation by Participants: 

There will be a required course evaluation form before a certificate is awarded.

Method of Evaluating Participants:

For each credit hour, there will be 4 quizzes consisting of 5 questions each pertaining to the testing of knowledge of the module.
